Skewers are perfect to serve as a light snack with drinks, as they are relatively mess free and only require one hand! Meat skewers are more traditional, but these peach and halloumi ones are a nice summery alternative.
To make 10 skewers, you will need:
– 5 peaches, cut into wedges
– 1 block of Halloumi cheese
– A drizzle of olive oil
– A handful of basil leaves
– 2 tbsp balsamic vinegar
– 10 wooden skewers
Start by soaking the skewers in water for a couple of hours- you can leave them overnight if you like. This stops them burning when you grill them.
Cut the peaches into wedges, and the halloumi into cubes. Carefully slide them onto skewers, alternating them as you go. The halloumi will start to break as you pierce it, so go gently but don’t worry too much if it breaks apart. This is why you need to cut relatively chunky cubes, because thin slices will just fall apart.
Give them a very light drizzling of olive oil and slide them under the grill for 10 minutes, turning half way through. Once they have gone lovely and golden, pop them onto a plate, sprinkle with the basil and balsamic vinegar and then serve.
